Details Of The Wine Making Process
The client selects the wine to be created from experience or by an on the spot free wine tasting in our winery. The wine tasting is performed with wines created in our micro winery for that purpose. The client (customer) see's, and gets an explanation of, the entire process of making their wine. Examples of other customers' uniquely created wine labels are in the winery to spark their imagination and help begin new ideas for creating their own custom wine labels. A wine tasting party and wine making party can be made by appointment; we open the Micro-Winery after hours for those special events. We are a Metro Orlando winery located in Winter Park. So to make wine in Winter Park and make wine in Orlando, you have found the perfect place! Ageing The Wine
Aging is most noticeably the process of the tannins in the wine reacting with other components until they are unable to stay in solution, where upon they become sediment (precipitation). While this is happening, the aromas of the grape are replaced by the bouquet of the aged wine (reductive aromas).. All of the equipment required for the sanitizing and antibacterial treatment of the bottles and corks is available in the winery.
Bottling, Corking and Finishing
After the wine has completed the fermentation phase, preliminary ageing, and filtering, the customer is called and an appointment is made, as some customers have said, "for their babies to be born". It is so much fun to come in and bottle the wine, with most thinking it is almost as good as the drinking. It is also recommended that they compare each bottle, with those they drank before; to taste and understand how these newbie bottles of wine mature month after month. If any make it longer than 6 months in the bottle the ageing process will have made an incredibly more full bodied, complex, and smooth wine, to the point you think you have a Chateau Lafite Rothschild.
Some wines such as the high tannin red, Rieslings and some Chardonnays benefit from a longer period in the 6 gallon carboys to allow for the higher tannin and alcohol levels to gracefully blend with the complex chemistry in the wine.
